Chic and Easy on the Fly

I don’t know about you but I’m surly happy it’s here! Since I switched “My Martini Moment” and “Perfectly Plated” for St. Patty’s Day, today I’m bringing you not one but two easy and chic recipes both including Mascarpone Cheese! This is something I’ve never used before and I always like to try something I never have.

The first recipe is a fancy flatbread. This recipe is perfect if you’re entertaining and need to throw something together quickly.

This flatbread recipe is certainly one to save! It’s so simple!

  1. Place flour, yeast, salt, oil, and water in a bowl and let it sit until it bubbles a little. About five minutes.

  2. Add flour and use a dough hook stir (or just stir with a spatula)

  3. Once mixed let it sit with a towel over it for about ten minutes.

  4. Divide dough into two.

  5. Cook in oil on the stove for a minute or so on each side.

I topped mine with our Mascarpone cheese, fresh crab, spinach, red onions, and baby portobellos. Guys, I could eat this one over and over. This is such a great recipe to serve for a little gathering. Don’t forget the wine!

This next one is super fast and very elegant.

“Balsamic Blueberry Mascar Cheese BRUSCHETTA”

what you need:

one baguette

1 cup fresh blueberries

1 tbsp balsamic vinegar

1 tsp sugar

mascarpone cheese

mint

When I make bruschetta, I always throw it in the oven first on 375 for about 10 minutes. For the blueberries add the blueberries, vinegar, and sugar to a small skillet and cook for about 5 minutes. Then spread the mascarpone cheese on the bread and top with the balsamic blueberries. Finish it with some fresh mint or basil.
