A No Fail Fall Bite

Oh, hello there, Friends!

Guys, this human right here is exhausted. It’s been go, go, go since we got back from Hawaii in September, and I haven’t had much time to get my head on right or…finish a thought? So, let’s make an easy five ingredient dish. Make it to entertain or for everyone to pick on during the week when you might be busy running around.

what you need:

  1. Preheat oven to 400 degrees.

  2. Lay out puff pastry and score it.

  3. Add a layer of cheese and then apple.

  4. Put it in the over for round 25 minutes (I did 30).

  5. Pull it out and add thyme and honey.

This is absolutely going to be best when it’s right out of the oven. I served mine with champs an it was the perfect addition. Also, think Thanksgiving appetizer for this recipe. It is a seriously no fail fall bite.

It’s Courgette Season!

Hello, Hello All!

It’s finally courgette (zucchini) season and I for one couldn’t be any more excited. If you’ve followed me even a little bit these past ten years, then you know these are one of my favorite veggies to cook with in the summer. I found this recipe on Insta by @juliusroberts. He made me immediately make this. Go check him out! He’s amazing.

I am absolutely infamous for making a massive mess in the kitchen no matter what I make. I can’t help it, I inherited it from my Mother. Sorry Mom, can’t say it isn’t true. Having said that, this recipe was so easy that I didn’t even make a big mess in my kitchen! * bows *

This recipe is absolutely perfect to throw together when hosting, or for an evening on the patio. With only a few ingredients you have a beautiful and delicious summer dish.

Let’s make a Courgette Tart!

what you need:

  • puff pastry

  • 1/2 lemon, juiced plus lemon zest

  • 1 cup ricotta cheese

  • salt & pepper

  • green and yellow courgette

  • fresh basil

Before we get started, preheat your oven to 350 degrees. Then, with a vegetable peeler slice your courgettes into ribbons. Toss in a bowl with olive oil and flakey salt.

Score the puff pastry to create an edge.

Mix ricotta, lemon juice, zest, handful of fresh basil, salt, and pepper. Then spread over pastry.

Layer the beautiful ribbons.

Slice up some garlic and place sporadically.

Add another layer to protect the garlic.

Sprinkle some parmesan and fold over the edges.

Bake this for about 20-25 minutes but keep an eye on it. You want the edges to get golden brown.

This lite summer dish is so perfect for entertaining, and it doesn’t hurt to add a little champagne with it. Just saying…

Fancy Brunch…Fast!

It’s no secret that I love brunch in my soul. But sometimes as a busy Mom I have to enjoy it a little faster than I may have in the past. This easy recipe is a brunch star. Pleasing to the eye that comes together quick. Let’s start with a little bacon jam…

what you do:

Cube your bacon, dice your onion and throw the bacon in a pan. Let the bacon cook for a few minutes and add in onion until translucent. Add in all of the ingredients and continuously stir until it’s a jam like consistency.

After that step, you’ve only got a couple minutes until you’re enjoying brunch hopefully with some great company and bubbly.

In an oiled and heated pan toast your pita for a 1-2 minutes.

Add pesto (you can make it or use store bought).

Time for the bacon jam!

You can do the eggs any way you want, but I’m a slut for a dippy egg.

Throw on a little extra bacon. It is brunch after all.

Top with sprouts for some pizzaz.

Tada!

You’re all done! Since it’s brunch, you can add sausage links or patties to the side, I love tomatoes so that’s what I went with for a little side and garnish.

If you’re looking to speed this recipe up even more try a store-bought fig jam or something similar. Another option is buying small pitas and making one for each of your guests.
